5, Usage

Preparation:
1000 g Puff Mix Powder
1500 g Water 40-50XC

Rack oven
Alt. 1)
Bake approx 25 min. at 230XC, 15-20 sec. steam in the beginning, damper open ¼ after 10 min. (increase in volume of 3½-4 times).
Alt. 2)
Bake approx 30 min. at 210XC damper open ¼ (increase in volume of 3 times).

Deck oven
Alt. 1)
Bake 20-25 min. at 240-220XC falling temperature, damper open approx ¼ (increase in volume of 3½-4 times).
Alt. 2)
Bake approx 35 min. at 220-200XC falling temperature, damper open approx ¼ (increase in volume of 3 times). Mix powder and water until smooth (3-4 minutes in an electric mixer).
